Orange Chicken with Broccoli & Rice

Chicken breast

Orange

White rice (long grain)

100 g
Broccoli (fresh)

1 tbsp
Soy sauce

1 cm
Ginger (fresh)

1/2 clove
Garlic

1/2 tbsp
Flour (all-purpose)

- Step 1
In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & keep warm. - Step 2
Meanwhile, wash & slice the broccoli into florets. Cut them in halves or quarters, if needed. - Step 3
In a second pot of salted boiling water, add the broccoli. Cook for 5-6 min, then drain & keep warm. - Step 4
Meanwhile, slice the chicken into cubes. - Step 5
In a bowl, add : the cubed chicken & flour. Season with salt & pepper. Toss to coat the chicken evenly. - Step 6
Heat a drizzle of olive oil in a pan, over medium heat. Add the chicken & cook for 4-5 min, until the chicken is cooked through. - Step 7
Meanwhile, prepare the orange sauce. In a second bowl, add : the soy sauce, brown sugar, orange zest & juice, grated garlic & ginger. Whisk to combine. - Step 8
Add the orange sauce to the pan. Stir & cook for 1-2 min, until the sauce thickens. - Step 9
Serve the rice in a bowl with the orange chicken & broccoli. Re-season to taste & enjoy !
