  • Step 1
    Preheat the oven to 180°C. Peel & slice the onions in halves - you can also slice them in quarters, for a more tender end result.
  • Step 2
    Melt a dab of butter in a pan, over high heat. Add the onions & sauté for 2 min on each side.
  • Step 3
    Add a splash of water to the pan (approx. 2 tablespoons per serving), then cover & continue cooking for another 6-8 min, over medium heat, making sure the onions to not burn. If needed, add an extra splash of water.
  • Step 4
    Add the sugar & balsamic vinegar to the pan. Leave to lightly caramelize for 1 min, then cover & leave to simmer 5 min, over low heat.
  • Step 5
    In a round cake tin, add the onions facing downward & pour the caramel overtop.
  • Step 6
    Slide the pastry on top of the onions, folding the edges onto themselves. Prick the pastry with a fork & bake for 25-30 min at 180°C.
  • Step 7
    Once golden brown, remove the tart from the oven. Leave to cool completely before removing from the dish. Place a large circular dish in top of the pie dish & flip it in one swift gesture. Serve with a side of green salad & enjoy !
