Onion, Goat's Cheese & Honey Quiche

- Step 1
Preheat the oven to 180°C. Roll out & add the pie dough into a pie dish. Prick it with the tip of a fork & pre-bake in the oven for 5 min. - Step 2
Meanwhile, peel & finely slice the onions into thin strips. - Step 3
Heat a drizzle of olive oil in a pan over medium heat. Add the onions & cook for 25-30 min, stirring regularly. - Step 4
Once pre-baked, remove the pie casing from the oven & set aside. - Step 5
Prepare the quiche filling. In a large bowl, add : the eggs, milk & crème fraîche. Season with salt & pepper. Whisk to combine. - Step 6
Midway through cooking, add a splash of water to the pan with the onions (approx. 1 tbsp. per person) & continue cooking. - Step 7
Once the onions are cooked, add the honey & stir to combine. Cook for another 1-2 min. - Step 8
Slice the goat's cheese into rounds. - Step 9
Spread the confit onions into the pastry casing & pour le egg mixture over top. - Step 10
Add the goat's cheese rounds on top. Season with pepper & thyme, if you have some. Bake in the oven for 40 min at 180°C. - Step 11
Once baked through & golden on top, remove the quiche from the oven & serve warm with a side of green salad. Enjoy !
