One Pot Potato Curry

Ingredients for 1
200 g
Potatoes (steamed/fried)
100 g
Carrots (fresh)

Yellow onion
1 tsp
Tomato paste
50 ml
Coconut milk
50 g
Chickpeas (canned)
1/2 tsp
Curry powder

Cilantro (fresh)

- Step 1
Wash the potatoes, peel them then cut them into pieces. - Step 2
Peel then cut the carrots into slices. - Step 3
Peel then finely slice the onion. - Step 4
In a pan or casserole dish, add a drizzle of olive oil then brown the onion for 2-3 minutes with the curry powder. - Step 5
Add the tomato paste, carrots and potatoes then mix well. - Step 6
Add the coconut milk and 200ml of water per person then cook covered over medium heat for around 15 to 20 minutes. - Step 7
Then add the chickpeas. Add salt and pepper then continue cooking for another 3 minutes. - Step 8
Serve in a bowl with cilantro and lime if you have any. It's ready !
