  • Step 1
    Wash the potatoes, peel them then cut them into pieces.
  • Step 2
    Peel then cut the carrots into slices.
  • Step 3
    Peel then finely slice the onion.
  • Step 4
    In a pan or casserole dish, add a drizzle of olive oil then brown the onion for 2-3 minutes with the curry powder.
  • Step 5
    Add the tomato paste, carrots and potatoes then mix well.
  • Step 6
    Add the coconut milk and 200ml of water per person then cook covered over medium heat for around 15 to 20 minutes.
  • Step 7
    Then add the chickpeas. Add salt and pepper then continue cooking for another 3 minutes.
  • Step 8
    Serve in a bowl with cilantro and lime if you have any. It's ready !
