  • Step 1
    Cut the mushrooms into thick strips.
  • Step 2
    In a hot frying pan, add a knob of butter and the mushrooms.
  • Step 3
    Grate the garlic and sauté over medium heat for 10 minutes.
  • Step 4
    Meanwhile, rinse the white beans.
  • Step 5
    Put them in a saucepan. Add 1 tablespoon of olive oil per person, along with the lemon juice, salt and pepper.

    Mix.

    Add some water if the texture is too thick. You can add a pinch of thyme or rosemary if you have any. Warm the purée for 5 minutes over medium heat.

    After 10 minutes of cooking, pour the crème fraîche in with the mushrooms and leave to brown for 2 minutes.
  • Step 9
    Serve the purée with the fried mushrooms. Season to taste. It's ready!
