  • Step 1
    In a pot of boiling salted water, cook the pasta according to the package instructions.
  • Step 2
    Meanwhile, wash and cut the mushrooms into slices.
  • Step 3
    Heat a drizzle of olive oil in a pan. Add the mushrooms and grated garlic. Add salt and pepper and brown for 5 minutes over high heat. Reserve.
  • Step 4
    Once the pasta is cooked, take a ladle of cooking water per person, then drain the pasta.
  • Step 5
    Heat a knob of butter and a drizzle of olive oil in a pan. Add the escalope and brown it for 3 minutes on each side, over medium heat, until it is nicely grilled. Reserve.
  • Step 6
    Reduce the heat to low, then add the crème fraîche, grated parmesan and pasta cooking water. Salt, pepper and mix until you obtain a creamy sauce.
  • Step 7
    Add the pasta to the pan with the mushroom sauce and mix well.
  • Step 8
    Cut the Milanese escalope into slices if desired and serve with the mushroom cream pasta. Add a little grated parmesan, if you have any left. It's ready !
