White mushrooms (whole)
2 handfuls
Salad (lamb's lettuce-arugula mix)
15 g
Comté cheese

- Step 1
Wash and slice the mushrooms. - Step 2
Optional: chop some shallots if you have any. - Step 3
Add a drizzle of olive oil to a pan on high heat and cook the mushrooms (and shallots) for 5 minutes, stirring frequently. - Step 4
In the meantime, scramble the eggs with salt & pepper in a bowl. - Step 5
Once the mushrooms are golden brown, add the scrambled eggs and the compté (chopped in small pieces or grated) to the pan. - Step 6
Let it cook for 1-2 minutes on medium heat while breaking the bottom with a spatula to facilitate the cooking. - Step 7
Fold the omelet in half once the bottom is golden. - Step 8
Serve the omelet with a salad seasoned to your liking. Enjoy!
