  • Step 1
    In a large bowl, add the cous cous and 1/3 cup of cold water (yes, cold!) per person. Cover and let stand for 5 minutes to allow it to fluff.
  • Step 2
    Chop the mint and shallots. In a large dish, mix together the beef, spices, half of the mint, ¾ of the shallots, salt and pepper.
  • Step 3
    Depending on your taste, you can also add spices (Allspice, cumin, pepper, ras el hanout, garlic, etc) to the meat mixture.
  • Step 4
    Form balls in an oblong shape. You can also cook them on skewers.
  • Step 5
    In a preheated pan at high temperature, sautée the meatballs for 1-2 minutes on all 4 sides, until they are golden brown and cooked through.
  • Step 6
    Combine the yogurt with the rest of the mint and shallots. Add salt, pepper and a tablespoon of lemon juice and mix well.
  • Step 7
    To serve, plate the meatballs with the cous cous and yogurt. Add a dash of olive oil, salt and pepper and enjoy!
