Moroccan Chicken with Couscous

Dice the chicken. - Step 2
Mince the garlic. - Step 3
In a bowl, add half of the lemon juice and its zest, the vinegar, garlic, apricots and chicken. - Step 4
In a frying pan, toast the almonds for 2 minutes over medium-low heat. - Step 5
Place the couscous in a bowl, season with salt and pepper and cover with hot water or stock. Cover and set aside for 5 minutes to absorb. - Step 6
Meanwhile, finely chop the parsley. - Step 7
Fluff the couscous with a fork, then mix in a drizzle of lemon juice, the parsley and almonds. - Step 8
In a frying pan, brown the chicken for 4 minutes over high heat. - Step 9
Serve the couscouswith the chicken. Enjoy!
