  • Step 1
    Dice the chicken.
  • Step 2
    Prepare the marinade. In a bowl, combine : the balsamic vinegar, grated garlic & dried apricots. Coat the chicken in the marinade & set aside for 5-10 min.
  • Step 3
    Meanwhile, prepare the couscous. In a bowl, combine : the couscous, salt, pepper & a drizzle of olive oil. Pour over the same quantities of boiling water to couscous. Cover & leave to re-hydrate for 5 min.

    At the same time, toast the slivered almonds in a hot pan for a couple of min, until lightly golden. Set aside.
  • Step 5
    Wash & finely mince the parsley.
  • Step 6
    Heat a drizzle of olive oil in a pan, over medium heat. Add the chicken & its marinade. Cook for 4-5 min, stirring.
  • Step 7
    Once cooked, fluff the couscous with a fork. Add the parsley & almonds & mix to combine.
  • Step 8
    In a plat, serve the couscous with the marinated chicken. Top with fresh parsley, if you have some left & enjoy !

For a truly flavoursome dish, we suggest replacing the dried apricots with dates, dried figs or prunes, to switch things up.
