Dice the chicken. Add it to a mixing bowl with the marinade. Leave to marinate for 5-10 min. - Step 3
Meanwhile, prepare the couscous. In a bowl, combine : the couscous, salt, pepper & a drizzle of olive oil. Pour over the same quantities of boiling water to couscous. Cover & leave to re-hydrate for 5 min. - Step 4
At the same time, toast the slivered almonds in a hot pan for a couple of min, until lightly golden. Set aside. - Step 5
Wash & finely mince the parsley. - Step 6
Heat a drizzle of olive oil in a pan, over medium heat. Add the chicken & its marinade. Cook for 4-5 min, stirring. - Step 7
Once cooked, fluff the couscous with a fork. Add the parsley & almonds & mix to combine. - Step 8
In a plat, serve the couscous with the marinated chicken. Top with fresh parsley, if you have some left & enjoy !
😋 Gourmet tip
For a truly flavoursome dish, we suggest replacing the dried apricots with different dried fruits, to switch things up & to serve it with a yogurt sauce.
