  • Step 1
    Preheat the oven to 220°C. Rinse the mirabelles then cut them in half to remove the pit.
  • Step 2
    Add the softened butter and sugar to a large bowl, mix until creamy. Add the eggs, a pinch of salt and mix.
  • Step 3
    You can replace 1/4 of the flour with almond meal, for added flavor and moisture. Add to the batter and mix.
  • Step 4
    Place half of the mirabelles in the bottom of the pie dish, pour in the batter and add in the rest of the mirabelles. Sprinkle with one teaspoon of sugar.
  • Step 5
    Bake for 10 minutes at 220°C, then lower to 180°C and cook for another 30 minutes.
  • Step 6
    Insert a knife to make sure it is cooked through. Wait at least 10 minutes before serving (It's even better the following day!). Enjoy!
