In a bowl, add the chicken and half of the Mexican spice mix. Season with salt and pepper and add a drizzle of olive oil. Mix well to coat the chicken with the spices. - Step 2
Melt a knob of butter in a frying pan over medium heat. Add the burger buns, crumb side down, and toast them for 1 to 2 minutes, until golden brown. - Step 3
In the same skillet, heat a drizzle of olive oil over medium heat. Add the chicken and brown for 2 to 3 minutes on each side. Cover and continue cooking for 4 to 5 minutes. - Step 4
