Finely chop the onions. - Step 2
Wash, peel and cut the sweet potatoes into small cubes. - Step 3
In a large pot, add a splash of olive oil and cook the onions for 1 minute before adding the sweet potatoes. - Step 4
Add the tomatoes, 1 cup of water per person, vegetable stock cube, (optional: chilli), mix. - Step 5
Reduce the heat, cover and leave to simmer for 20 minutes. - Step 6
Meanwhile, cut the avocado in cubes. - Step 7
Serve the soup with your favorite toppings: tortilla chips, avocado, feta, lime and cilantro. - Step 8
Enjoy! If you prefer things a bit spicier, add a bit of chilli or Tabasco if you have any.
