Sun-dried tomatoes

Strain and rinse the chickpeas. Roughly chop the sun-dried tomatoes. - Step 2
In a small bowl, mix 1 tablespoon of olive oil per person, lemon juice (optional: apple cider vinegar), salt and pepper. - Step 3
Add the salad, chickpeas, tomatoes, goat cheese, crushed nuts to a large bowl bowl. Toss together with the dressing and serve. Enjoy!
