  • Step 1
    Remove the sausage casing to only keep the meat filling.
  • Step 2
    Shape the meatballs, by rolling the minced meat between your hands.
  • Step 3
    In a hot pan, over medium heat, add the meatballs. Cook for 3-4 min, stirring regularly, until golden all over.
  • Step 4
    Add 2 tablespoons of water per person. Cover & continue cooking for another 4-5 min, over low heat.
  • Step 5
    Meanwhile, in a pot of salted boiling water, cook the pasta according to pack instructions. Once cooked through, reserve a small ladle of coking water & drain the pasta.

    In a mixing bowl, crack the eggs. Season with salt & pepper then whisk them. Add the reserved pasta cooking water & grated parmesan while continuously whisking, until you obtain a creamy mixture.
  • Step 7
    Once the meatballs are well browned, turn off the heat. Add the strained pasta & egg / parmesan mix. Stir to evenly coat. Add the minced parsley (optional) & stir again.
  • Step 8
    Serve the meatball carbonara in a plat. Re-season to taste & enjoy !
