  • Step 1
    In a pot of boiling salted water, cook the rice according to package instructions. Once cooked through, drain the rice & keep warm.
  • Step 2
    Meanwhile, peel & finely dice the onions.
  • Step 3
    Cut the chicken into bite-size pieces & set aside.
  • Step 4
    Heat a drizzle of olive oil in a pot, over medium heat. Add the onions* & sauté for 3 min. *Check out our tips for this step
  • Step 5
    Add the tomatoes into the pot. Stir & simmer for 5 min.
  • Step 6
    Add 60 ml of hot water per person, the chicken stock cube & peanut butter. Stir to combine.
  • Step 7
    Add the chicken into the pot. Season with salt & pepper. Stir & let it cook for 8-10 min until cooked through.
  • Step 8
    Serve the rice on a plate with the Senegalese peanut & chicken stew. Add some parsley, if you have some, & re-season to taste. Enjoy!
