- Step 1
Clean & slice the mushrooms. - Step 2
Wash & halve the peppers, removing the heart & seeds. Thinly slice, then cut the slices into halves. - Step 3
Peel & thinly slice the red onion. - Step 4
Heat a drizzle of oil in a pan, over medium heat. Add the onions & sauté for 3-4 min. - Step 5
Add the mushrooms & bell peppers to the pan. Season with salt, pepper & you favorite spices - e.g : Mexican spice blend, cumin, smoked paprika, etc. Stir & cook for 6-7 min or until the veggies have lightly browned & softened. - Step 6
Assemble the quesadilla. Spread the crème fraîche onto one half of the tortilla. Add the grilled veggies & grated cheese on top. Fold the tortilla in half. - Step 7
In the same pan, over medium heat, add the quesadillas. Cook for 2-3 min, on each side, until golden with melty cheese. - Step 8
Cut the quesadillas into 3 pieces & serve with salsa. Enjoy !
