Cook the eggs in a pot of boiling water for 9 minutes. - Step 2
In the meantime, cut the avocado in half and then in thin slices. - Step 3
To make the vinaigrette, mix the lemon juice, one tablespoon of olive oil per person, salt & pepper. - Step 4
In a shallow dish, add the lentils (drained), the smoked salmon, avocado, and eggs(cut in half). Season with the dressing and enjoy!
