Cook the lentils according to the instructions on the package. Set aside. - Step 2
Optional: Lightly toast the pumpkin seeds for a few minutes. - Step 3
Cut the avocado into cubes. - Step 4
In a medium sized bowl, mix the yogurt, turmeric, lemon juice and zest, salt and pepper. - Step 5
Spread the yogurt sauce over the bottom of a plate, then add the lentils, avocado, and arugula. Top with the toasted pumpkin seeds and a drizzle of olive oil. Enjoy!
