Red lentils (dry)

80 g
Crushed tomatoes

50 ml
Coconut milk

1/2 clove
Garlic

1/2
Yellow onion

1 tsp
Curry powder

Carrots (fresh)

White rice (long grain)

- Step 1
Mince the onions. - Step 2
Peel and chop the carrots and onions. - Step 3
Add them in a pan, with the garlic. - Step 4
Cook them for 2 minutes. - Step 5
When the mixture is golden, add the curry and leave to cook for 2 more minutes. - Step 6
Add the lentils and double their volume of water. Cover and leave to simmer 10-12 mins on on a low heat. - Step 7
Cook the rice following the cooking time as recommended on the packaging. - Step 8
Add the tomato pulp & coconut milk. Season with salt & pepper to taste. Stir well. - Step 9
Arrange and serve!
