Lentil and sweet potato curry

Red lentils (dry)
70 ml
Coconut milk

Sweet potato
1 tsp
Tomato paste

Red onion

Vegetable bouillon (cube)

Turmeric (ground)

- Step 1
Peel the sweet potatoes and grate them using a box grater or food processor. - Step 2
Remove the outer layers of the onion and cut into thin slices. - Step 3
Heat a drizzle of olive oil in a large pot and add the onion, tomato paste and turmeric. Cook on medium heat for 2 minutes. - Step 4
Add the lentils, grated sweet potato and 1/2 cup vegetable broth per person. Season with salt & pepper. - Step 5
Add the coconut milk and cook over medium heat for 25 minutes, stirring from time to time. - Step 6
Pour into bowls and add an extra drizzle of coconut milk, some sliced onion, lime juice and parsley. Serve alone or with rice. Enjoy!
