Peel and finely dice the shallots. Add them to a bowl with the vinegar, mustard, and 1 tablespoon of olive oil per person. - Step 2
Add the lentils and smoked salmon to a bowl, top with the dressing and mix. Optional: add a spoonful of sour cream and chopped chives. Enjoy!
