Rinse the lentils with cold water and strain. - Step 2
Chop the avocado and cucumber in cubes. - Step 3
In a salad bowl, add the lentils, vinegar, 1 tbsp olive oil per person, avocado, cucumber, (optional: chopped mint), arugula, and fresh goat cheese. Season with salt & pepper, mix well and serve. Enjoy!
