Lemon-butter Cod with Roasted Tomatoes & Polenta

Cod (fresh)

Cherry tomatoes
50 g
Polenta
250 ml
Milk (whole)

- Step 1
Preheat the oven to 200°C. On a parchment paper lined sheet tray, add the cherry tomatoes. Drizzle over with olive oil & add the cod to the center of the tray. Coat the fish in oil. - Step 2
Grate the garlic onto the tomatoes & toss to combine. Season everything with salt & pepper. - Step 3
Top the cod with a few dabs of butter & the lemon slices (optional). Place the sheet tray in the oven & bake for 15-20 min at 200°C. - Step 4
Meanwhile, prepare the polenta. Bring the milk to a simmer, over low heat. Add the polenta while stirring. Cook for 3-4 min, stirring continuously, until the polenta has thickened. - Step 5
Add a dab of butter & season with salt & pepper. Remove from the heat & set aside. - Step 6
Remove the sheet tray from the oven. Serve the polenta with the lemon-butter cod & roasted cherry tomatoes. Add some fresh herbs & re-season to taste. Enjoy !
