- Step 1
Preheat the oven to 180°C. Allow the butter to come to room temperature. Zest & juice the lemons into a bowl. - Step 2
In a large bowl, combine softened butter, 50g of sugar & a pinch of salt (quantities for 1 batch). Mix or whisk well to combine. - Step 3
Mix in 125g of flour until a dough starts to form (quantities for 1 batch). - Step 4
In a rectangular baking dish, press the dough in an even layer on the bottom. Bake the crust for 10-12 min or until the edges are lightly browned 180°C. - Step 5
In the meantime, crack the eggs & add the remaining sugar in a medium bowl . Pour in lemon juice (straining out any pulp) & lemon zest. Add a pinch of salt & whisk it all together. Mix in the remaining flour until well combined. - Step 6
Remove the crust from the oven. Pour in the lemon filling & bake at 180°C for 30-35 min, until the filling is set. Remove from oven & cool completely (about 1h). - Step 7
Slice & top with powdered sugar. Serve & enjoy!
