Lemon & Olive Chicken with Couscous

Chicken leg (quarters)

Chicken bouillon (cube)

- Step 1
Peel & slice the onions into thin strips. - Step 2
Heat a drizzle of olive oil in a pan, over medium-high heat. Add the ground cumin, ginger & the sliced onions & sauté for 2-3 min, stirring. - Step 3
Add the chicken thighs & cook for 6-7 min, until lightly golden. - Step 4
Meanwhile, prepare the chicken stock. Dissolve the stock cube in 100ml of hot water per serving. - Step 5
Add the chicken stock & lemon juice to the pan. Stir, cover & leave to simmer for 20 min, over low heat. - Step 6
Towards the end of cooking, prepare the couscous. In a bowl, combine : the couscous, salt, pepper & a drizzle of olive oil. Pour the same volume of couscous in boiling water. Cover & leave to soak for 5 min. Fluff the couscous with a fork. Set aside & keep warm. - Step 7
Meanwhile, add the green olives to the pan with the chicken. Stir & continue cooking for another 2-3 min. - Step 8
