  • Step 1
    Preheat the oven to 180°C. Add the pie crust to a pie dish and prick a few times using a fork. Once the oven is hot, cook the crust for 5 minutes.
  • Step 2
    Discard the green stems from the leeks*, cut the rest in half lengthways then chop into 1 inch slices. *Check out our tips for this step
  • Step 3
    Put the leeks in a colander and wash well to remove any dirt or impurities. Drain.
  • Step 4
    In a hot pan, cook the leeks with a dab of butter (or olive oil) for 5 minutes or until they're soft.
  • Step 5
    In a bowl, add the eggs, milk, crème fraîche, salt, pepper and whisk until you have a smooth texture.
  • Step 6
    Once cooked, remove the pie crust from the oven. Spread mustard at the bottom then add in the leeks and scatter the crumble feta on top.
  • Step 7
    Add the egg mixture. Bake for 45 minutes and enjoy !

♻️ Zero waste tip

For a zero-waste dish, use the discarded leek stalks to make soup ! Rinse well & remove all damaged, dry & yellow parts before adding to your pot with the ingredients of your choosing.
