- Step 1
Peel & finely dice the onions. - Step 2
Peel & small dice the carrots. - Step 3
Heat a drizzle of olive oil in a pot, over medium heat. Add the onions & sauté for 1 mini stirring. - Step 4
Add the lime juice, turmeric & carrots to the pot.* Stir to evenly coat. Check out our tips for this step. - Step 5
& add the wheat, 250ml of hot water per serving, the stock cube & tomato paste. Season to taste. Cover & leave to simmer for 30 min, over low heat. - Step 6
Once the carrots are tender, serve the Iranian soup in a bowl. Top with a drizzle of cream or coconut milk & some fresh parsley, if you have some. Re-season to taste & enjoy !

For a trully flavoursome dish, we suggest adding a pinch of cumin, chili powder or Ras el hanout.
