  • Step 1
    Cut the potatoes into thick rounds.
  • Step 2
    In a container, mix 1/4 cup of water per person, 1/2 tablespoon of olive oil per person, paprika.
  • Step 3
    Add the potatoes to a hot frying pan and mix.
  • Step 4
    Bring to the boil, cover and cook for 15 minutes.
  • Step 5
    Peel, mince the garlic and onion, and chop mushrooms into slices.
  • Step 6
    Add them to the potatoes and cook for 5 minutes.
  • Step 7
    Add a bit of olive oil if the potatoes start to stick to the pan.
  • Step 8
    Make a hole per person in the potatoes and gently place the eggs inside.

    Season, cover and cook for 5 minutes on a low heat.

    Once the whites are cooked through, serve. Enjoy!
