- Step 1
Heat a frying pan on medium heat and add a drizzle of olive oil. Cook the tortillas for 1 minute on each side, until lightly golden. - Step 2
Crack the eggs into the same pan and cook for 4 minutes. - Step 3
While the eggs are cooking, slice the avocado. - Step 4
To plate, layer the tortillas, eggs, drained kidney beans and slices of avocado. Top with hot sauce. - Step 5
Optional: Add chopped cilantro. It's lunch time!
