Honey soy shrimp and mashed sweet potato

Cooked shrimp
250 g
Sweet potato
1 tsp
Honey
2 tsp
Soy sauce
5 g
Ginger (fresh)
10 g
Sesame seeds

Stovetop, Pot (small), Frying pan, Peeler, Colander

- Step 1
Wash and peel the sweet potatoes. Cut them into large cubes and cook in a pot of salted boiling water for 10 minutes. - Step 2
Tip: Peel the ginger with the back of a small spoon. - Step 3
Heat a drizzle of olive oil in a pan on medium heat. Add the shrimp and the grated ginger. Cook for 2 minutes. - Step 4
Add the soy sauce, honey and 2 tablespoons of water per person. Mix. - Step 5
Let the sauce reduce and start to caramelize on low heat for 3 minutes. - Step 6
Add the sesame seeds and remove from the heat. - Step 7
After 10 minutes, or when the sweet potatoes can easily be pierced with a knife, drain. - Step 8
Mash the sweet potatoes using a fork. Add a drizzle of olive oil and some water if too thick. Season with salt & pepper. - Step 9
Serve in a shallow dish or plate with a scoop of sweet potato topped with the shrimp. Add some extra sesame seeds. Enjoy!
