Frying pan, Stovetop, Pot (small), Peeler, Colander

  • Step 1
    Wash and peel the sweet potatoes. Cut them into large cubes.
  • Step 2
    Bring a large pot of salted water to a boil and add the sweet potato cubes. Cook for 25 minutes.
  • Step 3
    In the meantime, prepare the sauce. Mix the honey, curry, lemon zest and juice, and 1 tablespoon of olive oil per person. Season with salt & pepper and mix.
  • Step 4
    Add a drizzle of olive oil to a pan on medium-high heat. Add the pork chops and cook for 4 minutes on each side (or longer depending on their thickness). Season with salt & pepper.

    In the meantime, check the potatoes and drain when fork tender.

    Add salt, pepper and a drizzle of olive oil to the drained sweet potatoes and mash with a potato masher or fork. If too thick, add a little bit of water. Cover to keep warm.
  • Step 7
    Once the pork chops are cooked, lower the heat and add the sauce. Cook for 2 minutes while basting the pork with the sauce.
  • Step 8
    Add the mashed sweet potato to a place, topped with the pork chop and sauce. Top with some sesame seeds (optional) and enjoy!
