Honey Curried Pork Chops & Mashed Sweet Potato

Pork chops (boneless)
250 g
Sweet potato
1 tsp
Honey
1/2 tsp
Curry powder

Frying pan, Stovetop, Pot (small), Peeler, Colander

- Step 1
Wash and peel the sweet potatoes. Cut them into large cubes. - Step 2
Bring a large pot of salted water to a boil and add the sweet potato cubes. Cook for 25 minutes. - Step 3
In the meantime, prepare the sauce. Mix the honey, curry, lemon zest and juice, and 1 teaspoon of olive oil per person. Season with salt & pepper and mix. - Step 4
Add a drizzle of olive oil to a pan on medium-high heat. Add the pork chops and cook for 4 minutes on each side (or longer depending on their thickness). Season with salt & pepper. - Step 5
In the meantime, check the potatoes and drain when fork tender. - Step 6
Add salt, pepper and a drizzle of olive oil to the drained sweet potatoes and mash with a potato masher or fork. If too thick, add a little bit of water. Cover to keep warm. - Step 7
Once the pork chops are cooked, lower the heat and add the sauce. Cook for 2 minutes while basting the pork with the sauce. - Step 8
Add the mashed sweet potato to a place, topped with the pork chop and sauce. Top with some sesame seeds (optional) and enjoy!
