Red kuri squash (potimarron)
50 g
Feta cheese (block)

Red onion
1 pinch
Thyme (dried)

- Step 1
Preheat the oven to 180°C. Remove the outer layer and cut the onion into slices. - Step 2
Wash the squash and cut it in half, removing the seeds. - Step 3
Cut the squash into thin slices. - Step 4
Add the vegetables to an ovenproof dish and add a drizzle of olive oil, salt & pepper. Mix to combine and bake for 20 minutes. - Step 5
Remove the dish from the oven. Add the feta on top and drizzle it with olive oil, the honey, herbs and pepper. - Step 6
Bake for another 10 minutes, under the broiler, just until the feta is lightly golden. - Step 7
Remove from the oven and enjoy!
