Melt the butter in the microwave or in a saucepan and set aside. - Step 2
Crack the eggs into a bowl and whisk. - Step 3
Stir in half of the flour, mix, and add the rest little by little. - Step 4
Next, slowly add the milk until a smooth texture is obtained. Use between 2 and 3 cups of milk, depending on the texture of crêpes you'd like: 2 cups for thick pancakes and up to 3 cups for thinner, lighter ones. - Step 5
Add the melted butter and mix until smooth. - Step 6
Tip: Sift the flour to ensure there are no lumps. - Step 7
Lightly butter a frying pan on medium-high heat and add a ladle of batter. - Step 8
Cook for 1 to 2 minutes over medium heat. Flip the crêpe and cook for 1 minute on the other side. - Step 9
Repeat the process (grease between each one) until you've used all the batter. - Step 10
Add the toppings of your choice (jam, powdered sugar, butter, etc). Serve and enjoy!
