recipe

  • Step 1
Flatten the chicken using a heavy bottomed pan.
  • Step 2
Add a slice of cheese and ham on top of the chicken breast. Cut off anything that overhangs.
  • Step 3
Optional: Pass the blue cord in the flour if you have any. (This will make the meat more tender when cooking)
  • Step 4
Prepare two plates, one with the breadcrumbs and another with a beaten egg. Dip into the egg, then the breadcrumbs. Repeat the two steps again.
  • Step 5
Melt some butter in a hot frying pan and cook the cordon bleus for 5 minutes on each side.
  • Step 6
Peel and chop the potatoes into cubes.
  • Step 7
In a pot of boiling water, add the potatoes & cook for 15 min. Drain once cooked through.
  • Step 8
After 10 minutes have passed, turn down the heat, cover the pan and cook the cordon bleus for 10 extra min.
  • Step 9
Mash the potatoes using a fork, adding a bit of butter or olive oil, some milk and salt and pepper.
  • Step 10
Serve the mashed potatoes with the cordon bleus. Season and serve!
