Hidden Veggie Saucy Pasta

Pasta (rigatoni)

Yellow onion

Tomatoes (canned, crushed)

Carrots (fresh)

Bell pepper (red)

Oregano (dried)

Blender, Frying pan, Pot (small), Stovetop, Immersion blender

- Step 1
Peel & small dice the carrots. - Step 2
Rinse & small dice the zucchini. - Step 3
Wash the bell peppers & cut around the seeds. Small dice the peppers. - Step 4
Peel & dice the onion. - Step 5
Heat a drizzle of oil in a pan, over medium heat. Add all the veggies with a pinch of salt. Stir & cover the pan to allow the veggies to steam for about 3-4 min, until slightly softened. - Step 6
After 3-4 min, add add the garlic powder & oregano. Stir & cook for another 2-3 min. - Step 7
Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, reserve a small ladle of cooking water & drain the pasta. - Step 8
Add the crushed tomatoes to the pan & stir to evenly coat. Simmer for another 4-5 min. - Step 9
In a food processor or blender add the cooked veggies. Purée until smooth. If needed, add the ladle of the pasta cooking water to thin the sauce out. - Step 10
Combine the drained pasta with the creamy hidden veggie sauce. Top with grated parmesan & some red pepper flakes, if you have some. Serve & enjoy !
