Herby Potato Salad

Fingerling potatoes

Red onion
1/10 bunch
Parsley (fresh)
1/10 bunch
Cilantro (fresh)
1/10 bunch
Dill (fresh)

Wash the potatoes & slice in half or quarters, depending on their size. - Step 2
In a pot of salted boiling water, add the potatoes & cook for 20 min, over medium heat. Once cooked through, drain them. - Step 3
Meanwhile, peel & slice the red onions into thin strips. - Step 4
Prepare the quick pickles. In a bowl, combine : the onions & red wine vinegar. Stir & set aside. - Step 5
In the meantime, prepare the herby sauce. In a food processor or blender, add : parsley, cilantro, dill & 1 tablespoon of olive oil per person. Season with salt & pepper & mix until you obtain a smooth consistency. If needed, add a small drizzle of water to adjust the texture. - Step 6
Serve the potatoes with the herby sauce & quick pickles. Stir to combine & top with extra fresh herbs, if you have some leftover. Re-season to taste & enjoy !
