  • Step 1
    Wash the potatoes and cook them in a pot of salted boiling water for 20 minutes, or until tender. Drain at the end of cooking.
  • Step 2
    Cut the red onion in thin slices. Put them in a small bowl and cover with the vinegar. Set them aside to marinate.
  • Step 3
    In a food processor or blender, add the fresh herbs, salt & pepper, and 1 tablespoon of olive oil per person.
  • Step 4
    Mix and add some water if too thick.
  • Step 5
    Add the potatoes, herb sauce and onions (drain the vinegar) to a large bowl. Season with salt & pepper and mix.
  • Step 6
    Top with some fresh herbs and enjoy!
