Harvest Falafel Bowl with Squash & Goat's Cheese

Falafel

Butternut squash
2 handfuls
Spinach (babies)
70 g
Wild rice blend

Goat cheese

- Step 1
Preheat the oven to 200°C. Peel & slice the squash in half. Remove the pips & dice the squash. - Step 2
On a paper-lined baking tray, add the diced squash. Drizzle over with olive oil & season with salt & pepper. Toss to coat & roast for 30-35 min at 200°C. - Step 3
Meanwhile, prepare the rice. In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & keep warm. - Step 4
Heat a drizzle of olive oil in a pan, over medium heat. re-heat the falafel for 6-7 min, stirring regularly, until the falafel are nicely golden on all sides. Set aside & keep warm. - Step 5
Clean & dice the apples. - Step 6
Once cooked through, remove the squash from the oven. - Step 7
Serve the spinach in a bowl with the falafel, roasted squash, apples, warm rice & your choice of vinaigrette. Top with crumbled goat's cheese & re-season to taste. Enjoy !
