Harvest Chicken Bowl with Squash & Goat's Cheese

Wild rice blend
80 g
Butternut squash
2 handfuls
Spinach (babies)

Goat cheese

- Step 1
Preheat the oven to 200°C. Peel & slice the squash in half. Remove the pips & dice the squash. - Step 2
On a paper-lined baking tray, add the diced squash. Drizzle over with olive oil & season with salt & pepper. Toss to coat & roast for 30-35 min at 200°C. - Step 3
Meanwhile, prepare the rice. In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & keep warm. - Step 4
Heat a drizzle of olive oil in a pan, over medium heat. Add the chicken. Season with salt & pepper & cook for 4-5 min on each side, until cooked through. - Step 5
Clean & dice the apples. - Step 6
Once cooked through, remove the squash from the oven. - Step 7
Serve the spinach in a bowl with the diced chicken, roasted squash, apples, warm rice & your choice of vinaigrette. Top with crumbled goat's cheese & re-season to taste. Enjoy !
