In a saucepan of boiling salted water, cook the rice according to package instructions. Drain when cooked. - Step 2
Meanwhile, wash and cut the cucumber into small cubes. - Step 3
Peel and grate the carrots. - Step 4
Cut the avocado in half, then cut it into small cubes. - Step 5
Heat a drizzle of olive oil in a skillet over medium heat. Add the gyoza and cook for 2 minutes until golden. Add a drizzle of hot water. Cover and cook for another 2 minutes. - Step 6
Once the gyoza are cooked, remove the lid and let the remaining water evaporate for 1 minute. - Step 7
Serve the rice in a bowl or shallow dish with the cucumber, carrots, avocado, and chicken gyoza. Drizzle with soy sauce and sprinkle with chopped chives and sesame seeds, if you have any. It's ready!
