  • Step 1
    Cut the eggplants in thin strips.
  • Step 2
    Place eggplants in a frying pan or under the broiler. Add a splash of olive oil and cook for 5 minutes on each side.
  • Step 3
    Put the hummus in a bowl, add a teaspoon of water and mix until you have a smooth texture.
  • Step 4
    Serve the eggplants with the hummus, top with crumbled feta. (Optional: serve with parsley and pomegranate seeds.) Season and serve!
