Yellow onion

Greek Yogurt (plain)

1/4 clove
Garlic

1/10 bunch
Mint (fresh)

Add to a blender: quartered onions, chopped zucchini, avocado (skin and pit removed), garlic, mint, one tablespoon of olive oil (per portion) and the greek yogurt. - Step 2
Season with salt & pepper and mix until creamy. - Step 3
If the soup is too thick, add a little bit of water. - Step 4
Serve the gazpacho with desired toppings: zucchini noodles, a dollop of yogurt, or fresh mint. Enjoy!
