Cauliflower (fresh)

Chickpeas (canned)

Yellow onion
1/4 clove
Garlic
50 ml
Coconut milk
1/2 tsp
Turmeric (ground)
1 cm
Ginger (fresh)

- Step 1
Peel & finely dice the onions. - Step 2
Wash & cut the cauliflower into florets. Slice the florets in halves or quarters, depending on their size. Dice the stems. - Step 3
Heat a drizzle of olive oil in a pan, over medium heat. Add the onions & sauté for 1 min. - Step 4
Meanwhile, peel & mince the garlic. - Step 5
Add the turmeric, grated garlic & ginger to the pot. Stir & continue cooking for another 1-2 min, stirring. - Step 6
Add the coconut milk & cauliflower florets. Stir then add 100ml of water per serving. Season to taste, cover & leave to simmer for 5 min, over low heat. - Step 7
Drain the chickpeas & add them to the pot. Stir, cover & leave to simmer for another 5 min. - Step 8
Serve the golden pot in a bowl topped with fresh herbs & lemon juice. Re-season to taste & enjoy !
