Cauliflower (fresh)

Chickpeas (canned)
50 ml
Coconut milk

Turmeric (ground)

Ginger (fresh)

- Step 1
Chop the onions. - Step 2
Wash the cauliflower and cut into florets. - Step 3
Add a drizzle of olive oil to a large pot on medium heat. Add the onions and cook for 2 minutes. - Step 4
Dice or mince the garlic. - Step 5
Add the turmeric, grated ginger and garlic to the pot. Cook for 1 more minute, mixing frequently. - Step 6
Add the coconut milk, cauliflower, 150 ml of water per person, and season with salt & pepper. - Step 7
Cover and simmer on low heat for 10 minutes. - Step 8
After 10 minutes, drain the chickpeas and add to the pot. - Step 9
Optional: serve with fresh herbs and lemon juice. Enjoy!
