  • Step 1
    Peel & finely dice the onions.
  • Step 2
    Wash & cut the cauliflower into florets. Slice the florets in halves or quarters, depending on their size. Dice the stems.
  • Step 3
    Heat a drizzle of olive oil in a pan, over medium heat. Add the onions & sauté for 1 min.
  • Step 4
    Meanwhile, peel & mince the garlic.
  • Step 5
    Add the turmeric, grated garlic & ginger to the pot. Stir & continue cooking for another 1-2 min, stirring.
  • Step 6
    Add the coconut milk & cauliflower florets. Stir then add 100ml of water per serving. Season to taste, cover & leave to simmer for 5 min, over low heat.
  • Step 7
    Drain the chickpeas & add them to the pot. Stir, cover & leave to simmer for another 5 min.
  • Step 8
    Serve the golden pot in a bowl topped with fresh herbs & lemon juice. Re-season to taste & enjoy !
