Peel & thinly slice the onions. - Step 2
Heat a drizzle of olive oil in a skillet over medium heat. Add the onions and bacon. Sauté for 5 to 6 minutes, stirring occasionally. Once golden brown, set aside. - Step 3
In the same pan, heat a drizzle of olive oil over high heat. Add the gnocchi and brown for 2 minutes, stirring occasionally. Cover and continue cooking for 3 minutes over low heat, until golden brown. - Step 4
Reduce the heat to medium, then add the bacon and onion mixture to the pan. Add the cream and Parmesan cheese. Season with salt and pepper and continue cooking for 3 to 4 minutes, stirring. - Step 5
Serve the gnocchi carbonara-style on a plate. Sprinkle with Parmesan cheese and season to taste. It's ready!
