Chorizo (cured)

Chicken breast

Crème fraîche

Parmesan (grated)

- Step 1
Peel & finely mince the shallots. - Step 2
Slice the chicken into bite-sized pieces. - Step 3
Remove the chorizo skin & thinly slice. - Step 4
Heat a drizzle of olive oil in a pan, over medium heat. Add the shallots & sauté for 2 min. - Step 5
Add the chicken. Season with salt & pepper. Cook for 5-6 min. - Step 6
Meanwhile, in a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, reserve a small ladle of cooking water before draining the pasta. - Step 7
Once the chicken is lightly golden, add the chorizo. Stir & cook for another 2 min. - Step 8
Stir in the 'crème fraîche', grated parmesan & reserved cooking water. Simmer for another min, until the sauce begins to lightly thicken. - Step 9
Stir in the pasta until well coated. - Step 10
Serve the creamy chicken & chorizo pasta in a plate. Top with extra grated parmesan & re-season to taste. Enjoy !
