Chop the apricots. - Step 2
Shell and coarsely chop the pistachios. - Step 3
Make the dressing by mixing: the vinegar and 2 tablespoons of olive oil/person, salt, pepper. - Step 4
In a salad bowl, toss the salad with the dressing. Then add: the chopped pistachios and apricots and the gingerbread cut into small pieces, mix. - Step 5
Serve the salad and add the fresh goat cheese.
