Ginger Chicken & Cashews

- Step 1
Cook the rice according to the instructions on the package. Drain and set aside. - Step 2
Peel the carrots and cut them into slices on the diagonal. - Step 3
Cut the broccoli into florets. - Step 4
Finely dice the garlic. - Step 5
Add a drizzle of olive oil in a pan on medium heat and add the vegetables. Cook for 3 minutes. - Step 6
Add half the garlic. Add half the grated ginger and a tablespoon of water per person. Season with salt, cover and cook for 5 minutes. Reserve at the end of cooking. - Step 7
Add a drizzle of olive oil to a pan on high heat and cook the chicken on each side for 2 minutes (or longer depending on how thick the chicken is). - Step 8
Remove the chicken from the pan and cut into strips. - Step 9
In the same pan, add the cashews, soy sauce, the rest of the garlic and ginger, 1 tablespoon of water per person, the chicken and one teaspoon of sugar per person. Cook on low for 2 minutes. - Step 10
Serve the chicken with the rice and vegetables. Enjoy!
