Garlicky Shrimp with Rice & Salad

Raw shrimp
1/2 clove
Garlic
70 g
White rice (long grain, cooked)
1 tbsp
Soy sauce
1 handful
Spring mix lettuce

- Step 1
If needed, defrost the shrimp. Heat a drizzle of olive oil in a pan on medium-low heat. Add the garlic & cook for 1-2 min until fragrant. You don't want to brown the garlic, so lower the heat if needed. - Step 2
Add the shrimp to the pan & season with salt & pepper. Cook for 1-2 min on each side. - Step 3
Move the shrimp to one side of the pan. Add the rice & drizzle over with soy sauce. Stir to combine & continue cooking for 4-5 min, until the shrimp is pink & cooked through & the rice is warm. - Step 4
Serve the garlicky shrimp with a side of rice & green salad seasoned to taste. Enjoy !
