Flank Steak with Shallots & Mashed Potatoes

Flank steak

- Step 1
Peel and chop the potatoes into cubes. - Step 2
Insert the whisk into the thermomix bowl (make sure the whisk is well installed between the blades). Add the potato cubes and milk to the bowl. Start cooking for 24 min/100°C/reverse direction/speed 1/without a cup. - Step 3
Meanwhile, mince the shallots. Add a 1/3 of the butter to a hot frying pan and cook them for 2 minutes. Add a bit of water and leave it to evaporate. Chop up some chives if you have any and put them to the side. - Step 4
Once the water has evaporated, add the steak to a frying pan and cook for 2 minutes on each side for medium rare. (It's a thinner cut of steak so it cooks fast, so if you like your steak rare or medium, be sure not to cook it for too long!) - Step 5
When the thermomix timer stops, add 1/3 of butter per person. Add salt and pepper and blend for 20 seconds/reverse speed/speed 2 (if you want a very smooth purée, turn off the reverse speed function). - Step 6
Once the steak is cooked to your liking, remove it from the pan. Add a bit of water into the pan with the last 1/3 of the butter to make the sauce. When the butter is melted and browned, the sauce is done. - Step 7
(Optional: Mix the chives into the mashed potato if you have any.) Plate your mashed potatoes with your flank steak, top with the shallots and drizzle the sauce over the top. And enjoy!
