Flank Steak with Shallots

Flank steak

Shallot

- Step 1
Peel and chop the potatoes into cubes. - Step 2
Cook the potatoes in boiling water for 20 minutes. - Step 3
Meanwhile, mince the shallots. - Step 4
Add a 1/3 of the butter to a hot frying pan and cook them for 2 minutes. Add a bit of water and leave it to evaporate. - Step 5
Chop up some chives if you have any and put them to the side. - Step 6
Once the water has evaporated, add the steak to a frying pan and cook for 2 minutes on each side for medium rare. (It's a thinner cut of steak so it cooks fast, so if you like your steak rare or medium, be sure not to cook it for too long!) - Step 7
Mash them with a fork, salt and pepper to taste, and add some butter or olive oil if you wish. - Step 8
Remove the meat from the pan. Add a bit of water into the pan with another 1/3 of the butter to make the sauce. When the butter is melted and browned, the sauce is done. - Step 9
(Optional: Mix the chives into the mashed potato if you have any.) - Step 10
Plate your mashed potatoes with your flank steak, top with the shallots and drizzle the sauce over the top. And enjoy!
